March 17, 2012 marked another great journey for Moderne Culinaire Academy (MCA) with the launching of their culinary school - the newest culinary school in the Philippines formed by Chefs Dino Guingona, Raymar Reyes and Aileen Digman-Palomares who have excelled in their own individual fields. The Grand Open House was held at AFPOVAI Phase 1 in Fort Bonifacio, Taguig City, where the academy is located.
Moderne Culinaire Academy (MCA) Moderne Cuilinaire Academy is the newest Culinary School in the Philippines. A TESDA-accredited institution for technical and vocational education. It is located in the heart of Taguig City, a neighboring city of Makati and also accessible to Paranaque and Metro Manila. MCA was formed by young talented chefs who are all experts in different fields, pursuing a common goal of providing the highest quality hands-on culinary education. MCA mision and vision is to be at the forefront of the highest standard in culinary education founded on the principles of discipline, thoroughness, diligence and pesistence. Unlike other culinary schools, a class at the MCA will be personalized with an average ratio of nine (9) students per chef instructor. The academy offers everything you would expect from a major culinary arts school. Its facilities include state-of-the-art kitchens, dining and restaurant facilities, lecture rooms, a full bar, WIFI internet access, and a culinary research center.
The culinary studio has an innate capacity to hold culinary, bakery or product demonstrations. It is also equipped with large tables for bigger work space and modern cooking gadgets.
The grand opening was started with a brief video introduction and a short talk from Chef Dino Guigona, the Head Chef and the Culinary Program director of MCA. Because of the love and passion Chef Dino has for culinary arts, he wants to share his skills and talents to everyone by putting up the MCA. After orienting the guests, we were lead to the ribbon cutting together with Mrs. Teresita Ang, wife of Ramon Ang, the President of San Miguel Corporation.
Chef Billy Anislag who is one of the best chefs on Fruit and Vegetable Carving in the country, demonstrated his crafts and techniques on his field. He did various artworks which are all impressive. Using his own-designed knives, Chef Billy turned watermelon into a flower. There was also a photo exhibit of his work allowing the guests to visualize more of his works and he also displayed his dragon design through pumpkin, flowers out of carrots and turnips.
After going up and down from the tour, it was time for the guests to gather to the Modern Culinaire Academy's Airstip Function Room where you can catch a glimpse of the Makati Skyline, the Alfresco area and eye level fly of the airplanes. Foods especially cooked by the MCA chefs were served to the guests. Cocktails and drinks were also served by the MCA Catering.
Programs Offered Moderne Culinaire Academy runs/conducts training programs for those who want to specialize in culinary arts. MCA is accredited by TESDA that offers one year programs for students who are interested to pursue culinary careers. MCA List of Module for Diploma Program:
