Moderne Culinaire Academy: Explore The Art Of Food

Food is Art. Cooking is like painting, you add colors to give spices to your painting, you mix them to give a unique taste to your artwork, you add just the right amount of ingredients to make your own masterpiece.  Dione Lucas said, "The preparation of good food is merely another expression of art, one of the joys of civilized living."
I firmly believe that arts play a major role in foods and culinary, from decorating the food, setting the table beautifully and choosing the ingredients that will truly delight our senses. For me, appearance is a major component of food and that is where the artistry will merit. This is the reason why I grabbed the opportunity to attend the Grand Open House of the Moderne Culinaire Academy, to truly experience the art of cooking and the art of food. 

March 17, 2012 marked another great journey for Moderne Culinaire Academy (MCA) with the launching of their culinary school - the newest culinary school in the Philippines formed by Chefs Dino Guingona, Raymar Reyes and Aileen Digman-Palomares who have excelled in their own individual fields. The Grand Open House was held at AFPOVAI Phase 1 in Fort Bonifacio, Taguig City, where the academy  is located. 


Moderne Culinaire Academy (MCA)

Moderne Cuilinaire Academy is the newest Culinary School in the Philippines. A TESDA-accredited institution for technical and vocational education. It is located in the heart of Taguig City, a neighboring city of Makati and also accessible to Paranaque and Metro Manila.

MCA was formed by young talented chefs who are all experts in different fields, pursuing a common goal of providing the highest quality hands-on culinary education. 

MCA mision and vision is to be at the forefront of the highest standard in culinary education founded on the principles of discipline, thoroughness, diligence and pesistence. 

Unlike other culinary schools, a class at the MCA will be personalized with an average ratio of nine (9) students per chef instructor. This is to assure them of a more focused and direct approach to their course of study. 

Students who sign up for the one (1) year program will be exposed to 640 hours of Internship (possibly the longest and most thorough in the industry) in a reputable and accredited food service institution. 


The Facilities

The academy offers everything you would expect from a major culinary arts school. Its facilities include state-of-the-art kitchens, dining and restaurant facilities, lecture rooms, a full bar, WIFI internet access, and a culinary research center.

The culinary studio has an innate capacity to hold culinary, bakery or product demonstrations. It is also equipped with large tables for  bigger work space and modern cooking gadgets.

The kitchens in MCA are all walled with glass which is very transparent to the exterior. This makes the people get the tastes of what is  hapenning inside the kitchen.  The modern design reflects the exceptional cooking going on inside and also with a great venture for students to have a convenient working and learning environment.  With its modernity, MCA is a great place to learn how to cook in a professional and well-designed environment. 


Grand Open House

The grand opening was started with a brief video introduction and a short talk from Chef Dino Guigona, the Head Chef and the Culinary Program director of MCA.  Because of the love and passion Chef Dino has for culinary arts, he wants to share his skills and talents to everyone by putting up the MCA. After orienting the guests, we were lead to the ribbon cutting together with Mrs. Teresita Ang, wife of Ramon Ang, the President of San Miguel Corporation.

Opening its door, the guests had a special tour around the culinary where we had the chance not only to see the entire academy but also to meet Philippines' top chefs.  

Chef Billy Anislag who is one of the best chefs on Fruit and Vegetable Carving in the country, demonstrated his crafts and techniques on his field. He did various artworks which are all impressive. Using his own-designed knives, Chef Billy turned watermelon into a flower. There was also a photo exhibit of his work allowing the guests to visualize more of his works and he also displayed  his dragon design through pumpkin, flowers out of carrots and turnips.

Another great chef in the academy is Chef Kevin Mize, an international chef with specialty in baking and pastry. He taught us how to make a delicious cheesecake.  He also presented us three cheesecake flavors; chocolate and peanut butter, chocolate with beer and plain chocolate are all heavenly and appetizing. But of course, the unique taste of beer cheesecake was the most delightful for me.

Also, there were other MCA chefs popping in once in awhile to further provide you with the knowledge and skills. 

After going up and down from the tour, it was time for the guests to gather to the Modern Culinaire Academy's Airstip Function Room where you can catch a glimpse of the Makati Skyline, the Alfresco area and eye level fly of the airplanes. Foods especially cooked by the MCA chefs were served to the guests. Cocktails and drinks were also served by the MCA Catering.

The buffet consisted different courses especially prepared by Chefs Raymar Reyes, Dino Guingona and Aileen Palomares. The foods were Seafood Salad with Fish Crackers, Chicken Eggplant Roulade with Napoletana Sauce, Dulong on Sticky Rice, Croquettas, Crispy Longganisa on Hummus Crostini, Banof, ee Tartles, Chocolate Mousse and Seasalt Trufles.

Moderne Culinaire Academy runs/conducts training programs for those who want  to specialize in culinary arts.  MCA is accredited by TESDA that offers one year programs for students who are interested to pursue culinary careers.

one of my dream is to become a chef .pero sabi ko nga ke hubby ,i want to be a chef and cook for them only and not for everybody or work as a chef.

Agree, cooking is art. But not just in plating. Mixing of flavors to form a new balanced taste is art in itself. I wish I could enroll in this school. I can't cook to save my life!

Wow, the academy is certainly a very nice place to study culinary arts....the facilities simulates almost the real kitchen of a resto and hotels.

However, tuition will be affordable too for oridinary Juans who wish to enroll in a nice culinary school like MCA

Wow. This sounds really good. I am in culinary school right now and everything's great. It's kinda tough here in Sweden though but I am enjoying every minute of it. It's only for ten months with only Saturday and Sunday as rest. Internship is a total of 960 hours. Two months to go and I am done with school and the internship program.

I am thinking of sending my younger brother to a culinary school. he's in Manila so it's a good thing I've learned about this school. Will tell him about this. Thank you for the info :)

Truly well decorated food stimulates your senses towards the love of food. To decorate and serve the food is an art that can make even the simplest of food look like feast. Just a proper garnishing and if you are a wine lover the right amount of wine can do wonders in decoration along with food.
